Spanish Cauliflower “Rice”

Easy Spanish rice, made with cauliflower! (Adapted from https://www.wholesomelicious.com/cauliflower-spanish-rice)

Ingredients
 12 oz bag frozen cauliflower
 ¼ diced onion
 12 cloves garlic, minced
 ½ tsp cumin
 ¼ tsp salt
 1 tbsp tomato paste
 ¼ cup broth (optional)
 fresh cilantro for garnish
 fresh squeezed lime juice
Directions

Heat skillet to medium heat. Add onion and saute until fragrant.

Add minced garlic to skillet. Cook for a couple more minutes.

Add riced cauliflower to skillet, warm through.

Add cumin, salt, tomato paste, and broth (only needed if mixture is dry; frozen cauliflower may not need broth).

Continue cooking over medium heat until the tomato paste is thoroughly mixed into the cauliflower. Add broth or water if it becomes too dry.

Serve with cilantro garnish and/or lime juice
