Combine all ingredients in slow cooker.
Cook on low, overnight.
Add salt to taste after cooking.
I substituted a Tbsp of soy sauce and a Tbsp of Meyer lemon juice in place of the fish sauce and lime juice.
I used *all* the veggies and this came out soupy, so adding rice and/or shredding chicken helped.
