Slow Cooker Green Curry

Ingredients
 2 lbs chicken breast
 2 cans unsweetened coconut milk (I used 1 lite and 1 regular)
 ½ jar green curry paste (about 2 oz)
 1 tbsp fish sauce
 1 tbsp lime juice
 2 basil leaves
 salt, to taste
Plus choose at least 2 vegetables (or add your own!)...
 10 oz bag frozen broccoli
 8 oz sliced mushrooms
 1 zucchini, sliced
 1 onion, chopped
 2 carrots, sliced
Directions

Combine all ingredients in slow cooker.

Cook on low, overnight.

Add salt to taste after cooking.

I substituted a Tbsp of soy sauce and a Tbsp of Meyer lemon juice in place of the fish sauce and lime juice.

I used *all* the veggies and this came out soupy, so adding rice and/or shredding chicken helped.
