Made using bulk jalapeño-cheddar brat sausage from Dickman's! Any desired sausage/veggie/dairy substitutions would also work well.
Preheat oven to 375 degrees. In a medium skillet sauté and crumble the ground sausage until cooked. Remove sausage and set aside.
Sauté the mushrooms, zucchini, and onion until tender (but not mushy!), about 10 minutes. Return the cooked sausage to the pan with the veggies, and mix everything together.
In a medium bowl combine eggs, milk, cheese, salt and pepper. Pour on top of the sausage and vegetables. Bake for 20-30 minutes or until top is golden brown and egg mixture is set.
