Soak the raisins in the whiskey for 1 hour (Pioneer Woman’s idea!)
In a medium pot add rice, milk, salt, sugar, vanilla, and cinnamon stick.
Cook over medium heat for about an hour until it thickens, stirring every 10 minutes.
Remove cinnamon stick, and stir in raisins.
Sprinkle ground cinnamon over the mixture, and serve warm or chilled.
I stopped the cooking process just short of an hour, when I noticed the mixture was boiling. This was perfect. 🙂
I soaked the raisins for 2 hours, but the whiskey flavor wasn’t strong once added to the pudding.
