Orange Spicy Almonds

Roasted Almonds with a citrus kick! Perhaps needs a little more zest and/or cayenne pepper. (Adapted from https://www.myrecipes.com/recipe/orange-chipotle-spiced-pecan-mix & https://jessicalevinson.com/orange-scented-nuts)

Ingredients
 1 tbsp grated orange rind
 1 tbsp fresh orange juice
 1 large egg white
 2 cups raw almonds
 1 tbsp dark brown sugar
 ½ tsp kosher salt
 ½ tsp Santa Cruz chile powder
Directions

Preheat oven to 225 degrees F

Combine first 3 ingredients in a medium bowl; stir with a whisk.

Stir in almonds.

Combine sugar, salt, and pepper, then add to almond mixture; toss well.

Spread mixture in a single layer on a baking pan coated with parchment and cooking spray.

Bake at 225° for 1 hour, stirring occasionally.

Remove from oven; cool completely.

Most recipes recommend cayenne pepper; chile powder didn’t have any kick, so I’d try cayenne, chipotle (or some additional spices) next time.

Can be stored in an airtight container for up to one week.
