Instant Pot Turkey Carcass Soup with Rice

Great way to use up turkey carcass after a holiday. We used the bones from an apple cider smoked turkey breast and it was AMAZING! (Adapted from https://www.dadcooksdinner.com/pressure-cooker-day-thanksgiving-turkey-carcass-soup)

Prep Time5 mins
Broth Ingredients (can be made ahead!)
 1 carcass from turkey breast/whole turkey, cut up to fit in Instant Pot
 1 onion, peeled and halved
 1 carrot, scrubbed
 2 bay leaves
 1 tsp salt
 3 qts water (or until the bones are covered; don't exceed the Max Fill line)
Soup Ingredients
 1 tbsp butter
 1 onion, chopped
 1 stalk celery, chopped
 1 carrot, peeled and chopped
 1 tsp dried thyme
 ½ tsp salt
 2 qts turkey carcass broth
 2 cups shredded leftover turkey meat (about 1 turkey breast)
 ¼ cup water
 1 ½ cups uncooked long-grain rice
Turkey Carcass Broth Directions

Add turkey bones, onion, carrot, bay leaves, and salt to the Instant Pot, then add water to the Max Fill line.

Cover the Instant Pot, set valve to "sealing", press the Manual button, and set the timer to cook for 90 minutes.

Allow for a natural pressure release (about 30 minutes), then strain broth, discarding bones and solids.

Wipe out the Instant Pot, then add 1 Tbsp butter to Instant Pot and set to Saute.

Saute the onion, celery, carrot, thyme, and 1/2 tsp salt in the melted butter until the vegetables are slightly browned, about 5 minutes.

Add the turkey broth to the Instant Pot, and turn the Saute heat to high (press Adjust until More is lit). Cover and bring the broth to a boil.

Once boiling, stir in the shredded turkey and rice. Bring back to a boil, then reduce the heat to Normal using the Adjust button.

Simmer until rice is cooked (about 10 minutes), then add salt to taste (about 2 tsp Kosher salt).
