Cheese. Macaroni. Greek Yogurt. Broccoli. Spinach.
Boil macaroni according the package instructions.
While macaroni is boiling, microwave broccoli. Puree broccoli and set in a small bowl. You can also use a bag of cauliflower in place of broccoli or in addition.
Shred cheddar cheese and mozzarella. I actually cut up both cheeses and place in the food processor. I also like to add whatever cheese is in the fridge like gouda.
Strain macaroni and return to hot pot on the same burner it was boiling on but turn the burner off. Add the yogurt, cheese, milk, purees, flax or chia seeds. Stir together. Ted likes it with a lot of Greek yogurt so at this point, I add more. The kids like it when it's cheesy and saucy.
