Greek Yogurt Onion Dip

Ingredients
 1 onion, diced
 olive oil
  tsp salt, for cooking with onions
 1 clove garlic, minced
 1 cup plain Greek yogurt
  cup olive oil or avocado oil mayonnaise
 ¼ tsp smoked paprika or cayenne pepper
 ¼ tsp black pepper
 ½ tsp salt

Heat a saute pan over medium heat, and coat with olive oil

Add onions and salt to pan.

Cook onions for about 20 minutes, stirring occasionally, until the onions are caramelized.

When the onions are nearly finished cooking, stir in the garlic, and cook for another minute.

Set onions aside to cool, then whisk together Greek yogurt, mayo, paprika/cayenne, pepper, and salt.

Stir in cooled onions.

Cover, and stir again before serving; this is even better the next day!
