Preheat oven to 290ºF and line a baking sheet with parchment paper sprayed with non-stick spray.
Place almonds in a large bowl.
Beat the egg white until light and frothy.
Pour egg over the almonds and mix until all the almonds are coated.
Pour the seasoning mix over the almonds and stir until the almonds are fully coated.
Spread the almonds over the baking sheet in an even layer.
Roast for 30 minutes, turning and breaking apart chunks after 15 minutes.
Remove from the oven and cool on the pan before serving.
Original recipe suggested a 1 hour cook time, which was way too long as many of the nuts and coating tasted burnt
