Easy way to use up extra tortillas or chips!

Ingredients
 2 tbsp olive oil
 12 medium corn or flour tortillas
 28 oz red or green enchilada sauce (1 large can)
 ½ cup shredded Mexican blend cheese

Coat a large skillet with olive oil and heat over medium heat

Tear up tortillas into bite size pieces

Brown the tortillas in the skillet until the edges are crispy

Add sauce and cheese

Cover and simmer until cheese is melted

This is just a basic recipe. The following changes can be made:

- Use tortilla chips in place of the tortillas (they don’t have to be sautéed, just warmed with the sauce)

- Sauté some onions or peppers in the olive oil before adding the other ingredients

- Sauté shredded chicken or other meat before adding the other ingredients

- Add cumin to sauce mixture

- Top with other Mexican style toppings like green onions, slices, cilantro, or sour cream!
