Squash + Cheese = YUM!

Ingredients
2 tbsp olive oil
3 cloves minced garlic
½ onion, chopped
4 zucchini and/or Mexican gray squash, sliced
½ can (14.5 oz) diced tomatoes, rinsed
1 cup shredded Mexican blend cheese

In large saute pan, heat olive oil over medium heat.

Saute garlic and onion until brown.

Add zucchini/squash slices, cover and simmer for 10 minutes.

Add diced tomatoes, then simmer on low heat until zucchini/squash is soft, about 30 minutes.

Top with shredded cheese; allow to melt, then serve.
