Super delish carbonara casserole using spaghetti squash!

Bake or microwave spaghetti squash (this microwave method works well: https://www.mexicateria.com/recipes/microwaved-spaghetti-squash), then remove the seeds, scrape out flesh with a fork, and set aside.
Preheat oven to 375 degrees.
Spray a 9x13 baking dish with cooking spray.
Saute the diced pancetta in a skillet over medium heat until the edges crisp.
Add the onions to the skillet and cook until they're soft and begin to brown. Remove from heat and set aside.
Whisk the eggs in a large bowl, then whisk in the ricotta.
Fold in the cooked bacon and onions, then 1 cup of the grated cheese and the salt and pepper.
Mix the squash into the egg and onion mixture. Spread in the baking dish and top with the remaining 1/4 cup of cheese.
Bake until set and golden-brown on top, about 45 minutes.
The casserole can be assembled ahead of time, then baked the next day.
