Chocolate-Zucchini-Banana-Applesauce Muffins

Delicious chocolate muffins filled with fruits and veggies!

Ingredients
 2 ripe bananas, mashed
 2 medium zucchini, grated and pressed dry between paper towels (2 cups)
 2 eggs
 4 oz applesauce (1 lunchbox container)
 1 tsp vanilla extract
 1 ½ cups flour
 1 cup brown sugar, packed
 ½ cup unsweetened cocoa powder
 1 tsp baking soda
 ½ tsp baking powder
 ½ tsp cinnamon
 ¼ tsp salt
 1 ½ cups chocolate chips, divided
Directions

Preheat oven to 350 degrees. Line a cupcake tin with baking cups.

In a large bowl combine banana, zucchini, eggs, applesauce, and vanilla. Stir well until combined.

Add all remaining ingredients except for the chocolate chips and stir until just blended (don't overmix, or it the muffins will be tough!)

Fold in 1 cup of chocolate chips.

Fill each cupcake liner 3/4 full, and top with remaining chocolate chips.

Bake 30 minutes or until toothpick inserted in the middle comes out clean.

This recipe was EXCELLENT, but the cinnamon only provided a mild flavor.

This batch allowed for 12 full size muffins and 24 mini muffins (the mini muffins were finished baking first, and the regular size muffins required some extra time)
